We’ve had bottles from Thompson Bros on the site before, but never a bottle of their very own whisky from the tiny Dornoch distillery. Being artisanal whisky makers (until their bigger operation comes on line in a few years time), annual output is very small. It also doesn’t help that they allocate their bottles by means of a weighted ballot. All this means its incredibly hard to acquire a bottle of Dornoch whisky & drams/bottles are valuable currency amongst whisky geeks.
This particular bottle is a micro-vatting of Dornoch Casks, made up of two American oak, ex-Islay Quarter Casks. The casks have brought a gentle salinity and a hint of peat to the complex, fruity and oily Dornoch Spirit.
Filled on the 13th of December 2019 with Spirit produced from Organic Floor Malted Maris Otter, which was fermented for 9 days using a local brewers yeast in open-top oak fermentation vessels. As with all Dornoch Spirit, cut points are carried out by sense and vary based on multiple factors. Bottled in 2024 at five years old, with a total of 513 bottles released.Â
Expect high acidity, salinity, bitter Italian herbs, waxes, oils, soft stone fruits and a hint of peat.
